I would like to force applications to go through the socks SSH tunnel, but some applications will use the default Web proxy in the Network configuration. I'd like to force these through Meerkat via something akin to socksify. There may be other 3rd party socksify solutions out there (though I haven't been able to find any) but ideally it should be an option tied to the ability to choose an application within a given Meerkat Tunnel.

This is an interesting idea, but let me make sure I understand you right.
You would want an option when editing a Meerkat tunnel to auto-configure another application to use a socksify-like product to tunnel its traffic through that tunnel?
