I would like to make sure I am backing them up.
Is it possible to replace these files with symbolic links to another directory on my machine
(a directory that is frequently backed up)

Hi Don. Here is a complete list of Meerkat's data:
1) Preferences are in Home > Library > Preferences > net.codesorcery.Meerkat.plist.
2) Application data (tunnels, accounts, etc.) is in Home > Library > Application Support > Meerkat.
3) Saved passwords are in the keychain (Home > Library > Keychains > login.keychain by default).
These are all standard locations for app data.
As for symlinking, you should be able to, though the keychain might prove tricky as it's not Meerkat-specific. But the preferences & app data should be able to be linked like that. Just make sure you quit the app while doing the links.
